As a young girl my parents always had a little bit of trouble getting me to eat my green vegetables. I was an extremely picky eater to begin with, so I applaud them for dealing with my idiosyncrasies so well. Y’all deserve a medal.
But now as a 20 something adult, I LOVE my greens. I can’t get enough fresh produce. I can honestly say that big leafy greens and veggies are now something that I crave on a daily basis.
This week while I was looking around on the web to get inspired, I came across an older article on one of my favourite blogs, laurenconrad.com. The article, “Ask a Nutritionist” led me to a very inspiring woman, Kelly LeVeque. Kelly is a certified holistic nutritionist, wellness expert and health coach based in Los Angeles and she knows her stuff!
My favourite question that they asked Kelly? “What are the absolute healthiest foods that you recommend eating daily?” Her response was as follows:
“Dark leafy greens, cucumbers and lemons are also staples in my fridge. Alkaline, fiber-rich and full of water, these foods keep your internal ecosystem alive and well—not to mention they are full of vitamin C and antioxidants. Looking for fats and fiber? Coconut oil, avocados, and chia seeds keep my clients satisfied, insulin sensitive and regular (yep, I said it!).”
I love the recommendations and I am thrilled that I am already including most of them in my daily diet. However, for those of you who tend to shy away from greens, don’t be afraid to take a look at what I have for you to try out below. Keep in mind the benefits you could receive from incorporating leafy greens into your meals. As highlighted by Kelly, having stable blood sugar and getting regular are all going to contribute to your overall health!
It was super easy to make and I had all the ingredients in my fridge or pantry. I especially loved the dressing. It was the perfect touch to finish the dish! Let me know if you try this salad out. - Dill Cilantro
- Hemp Seeds
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup lemon juice
